Happy February !!

marble butter cake

… after a few trials and errors, this is a good one.

What?

120g Self-raising flour
1/2 tsp baking powder
120g castor sugar
120g butter
2 eggs
1 tsp vanilla essence
1 tbsp cocoa powder
1/4 tsp coffee paste
1 tbsp milk powder

How?

Part 1
1. Pre-heat oveb at 180C
2. Line a 20cm round cake tin with grease proof paper.
3. Sieve self-raising flour, milk powder and baking powder and set aside
4. Cream castor sugar and butter until light and fluffy in a mixing bowl.
5. Beat in eggs one at a time and mix until even.
6. Add in vanilla essence. Fold in flour, half portion at a time. Mix well on lowest speed until well combined.

Part 2
1. Sieve cocoa powder. Blend the mixture of cocoa powder and coffee paste with half of the batter (part 1) until even.
2. Pour batter from part 1 into the prepared cake tin followed by cocoa mixture.
3. Use a spoon to create the desired marble design on top.
4. Bake for 40-45 minutes or until a wooden skewer inserted in the center comes out clean.

Watching the attractive and colorful fireworks by the window, the big loud booming of the fireworks reminds me of home. Many asked how was my CNY. My answer was busy. In precise, I’ve been spending 75% of my CNY at work, 28% at home and 2% with friends. Seriously, I have to bring a little more balance in me. For the past 2 years, I’ve spent my time building up my business and I sometimes feel guilty for not spending much time with my family and peeps. That’s bad. Teruk, right?

So here I am… doing my best to balance up my life. A virtual toast to all of you and all those moment you get to enjoy with your loved ones. Yum Seng !! ~ Melle

my twenty eleven

By looking at these pictures in my photo albums, there’s a lot for me to ch-check it out. I can spend half a day to browse and reminisce. Looking back at those days, hey, I’ve been having lots of fun !! I’ve been to quite a lot of places too !! These memories are worth reminiscing. To keep it up, my action is to plan more fun projects, more family and friends outings and more adventures this year. I’ll always keep in mind that Simplicity is always amazing, wonderful and best in life. 😀

Happy 2012 !!

orange butter cake

…I’ve got orange butter cakes for my family and friends this year. Wanna try baking one for your loved ones? Welcome to the club and try this. It’s as easy as 1.2.3.

What?
150g butter
100g castor sugar
Grated rind of 1 orange
3 eggs
1/2 freshly squeeze orange juice

125g self-raising flour (sift)
1/8 tsp baking powder (sift)
1 tsp milk powder (sift)
Mix all 3 in a bowl

How?
1. Grease side and line the base of a 18-20cm round cake tin.
2. Cream butter, castor sugar and orange rind in a mixing bowl until light and creamy.
3. Beat in eggs one at a time, adding a little flour.
4. Beat in orange juice until well combined.
5. Add in sifted flour mixture, half-portion at a time.
6. Mix well on lowest speed until well combined.
7. Pour mixture into prepared tin and level the surface with a spatula.
8. Bake in preheated oven for 50-60 minutes or until a wooden skewer inserted into the center of the cake comes out clean.
9. Leave the cake to cool for 5-10 minutes before turning out onto a wire rack to cool completely.

Tips: Refrigerate it for 2-3 hours after completely cool for a refreshing taste. I like it with a cup of coffee too !! Yum… – Melle

…la la la laaa…

HELLO people. I am back !!

Sorry that I have not been blogging for a good couple of months. As the end of year 2011 is approaching, I’ve been busy with work + lotsa errands to run. In and out for everything, you know? Well that’s one. Two, attending wedding ceremonies, gatherings, meetings, some “shopping” here and there and you know what? At times, I hardly had any recollection of my weekends. Oh boy, age is catching up with me already. Hmm…  Okay, three!! Getting the nest done is hectic, tiring yet exciting that is undeniable (…) I do not really know what else to say nor express for this as it’s all written in the heart. I shall keep this section ellipsis till the next 10 or 20 posts 😀 And four, I have got to get myself prepared (both mentally and physically) for the festive seasons to come. You know, Christmas, New Year and soon Chinese New Year which is not long from now,  today… you know? *roll eyes* 

Anyways, the earth is not gonna stop moving around the sun and so we gotta keep on going. Let us all have a Merry, Merry Christmas. May we be blessed with health, positivities and happiness !!

… Here’s the photo of our yoga performance where I got it from Abby. Haven’t been on stage like eons (never like it though) but it was a great and fun experience. I have been staring on the screen for minutes and I’ve decided to let the picture do the speaking. I just felt overwhelm. I am going off for yoga class now and let’s keep our life balance. Handmade for Charity…

…Yeah, I’ve been extremely busy with work and some handcraft stuffs for the past 2 months. This is my first handcraft work for charity that I always wanted to do so. It was in my wish list, if you remember it from my earlier post. HE heard me. Thank you. Thank you Esther and Shammee for giving me this big opportunity to try. Albeit the response weren’t good but the opportunity given and the appreciation is more than words can say.

Not forgetting the yoga rehearsal where we were all very well-commited. It was indeed cwazy tiring but I believe we did spent our time meaningfully and gratefully. We built up trust, teamwork, friendship and lotsa warm-beautiful smiles filled up the space amazingly. Sincerely thanks to my family and Abner for the great support and understanding during those hectic days. I feel grateful to have such wonderful and thoughtful people in my life.
