I am a fan of oatmeal ever since I tried it back in Kluang. Here’s one of my favourite breakfasts that I often cook.
Ingredients:
β’ Quaker Oatmeal – 1 cup
β’ Water – 2 1/2 cups
β’ Pumpkin – about 3 slices – 1 inch thick each
β’ Carrot – 1/4
β’ Egg – 1
β’ Salt to taste – 1/4 teaspoon
β’ Optional – Chicken breast
Prep:
β’ Pumpkin – cut into cubes
β’ Carrot – cut into cubes
β’ Chicken breast – mince
Cook – Serving for 2:
β’ Bring the 2 1/2 cups of water, carrot and pumpkin cubes, minced chicken breast to boil in a medium sized saucepan.
β’ Add the oatmeal over the boiling water, stirring constantly to keep oatmeal from sticking to the bottom of the saucepan.
β’ Cook until thickness is to your liking.
β’ Add salt and lower the heat.
β’ Beat the egg on the oatmeal, stir, simmer for few seconds and it’s ready to serve.
